# Scotcheroo Haystacks > Scotcheroo haystacks are crunchy, coated in peanut butter sauce, and absolutely delicious. If you grew up loving Scotcheroos and butterscotch haystacks you’ll love these! ## Ingredients - 1 (5 oz.) container crunchy chow mein noodles - 1/2 cup butterscotch chips - 1 cup unsalted peanuts - 1 cup corn syrup - 1 cup peanut butter (creamy or crunchy) - 1 cup semisweet chocolate chips - 1 cup butterscotch chips ## Instructions 2. Combine the chow mein noodles, peanuts, and 1/2 cup of butterscotch chips in a large bowl. 4. In a medium saucepan, combine the corn syrup and peanut butter. Heat over medium heat, stirring until melted and smooth. Do not bring the mixture to a simmer. 6. Pour the peanut butter sauce over the dry ingredients and stir to coat evenly. 8. Using a cookie scoop, drop the mixture onto parchment paper-lined baking sheets. 10. Melt the chocolate chips and butterscotch chips in a double boiler or microwave. Heat for 30 seconds, then stir and heat for an additional 15-20 seconds. Do not overheat the chocolate. 12. Spoon the chocolate mixture over the haystacks and let them stand at room temperature until the chocolate hardens, or place them in the refrigerator for 20 minutes. 14.
