Service was decent Friday night, for a while there we were really rocking it hard.  We had a flow that was reminiscent of exactly what we are to be doing in that kitchen.  Vinnie was pleased with Austin's performance on the fryers.  Austin (like myself) needs to work a lot on our calling shit at the proper time.  I was told on my first day by Jake that when I was about to cheese the burgers that is when I was supposed to call out "Walking Table #", but I learned really quickly that that is not enough time.  Perhaps I'm moving too fast, but I really doubt that, but I'm going to start calling out walking orders a little earlier than I have been.  Austin requested that I do so, and I know that I need to do so. Diet Coke ran dry in the middle of service and ironically I was the only one in the kitchen that knew how to change out those large syrup boxes. We were running low on meat, and it came just in time for service but we had no time to get patties pressed in time.  I did some, Jason did some, Austin did some.  At the end of service when we were cleaning up, Jason said those bad boys needed to get pressed before we left for the evening.  Boom―I turned it into a diner operation. I had Ausin do nothing else other than weigh out the patties and set them in a loose pattern on a large pan so all I would have to do is put the ring mold around them and work them into shape.  Banged that shit out in like ten minutes. 72 burger patties just like that. Word. Vinnie mentioned that they think its insane the amount of hours I've been working between Jake's and diner and had asked that if I was raised up a little in wage and hours if I would consider cutting myself loose from the diner.  I said I would be but the reality is that the money probably wouldn't ever add up properly and so I'll probably still be stuck at the diner regardless of how much of a raise I get, cos I never meet or exceed forty hours. Service tonight, and a catering even tomorrow.  180 sliders―you've got to be joking! It's for close relations to the ownership, so we have to be on point.  Working apparently some hours like 2-8.  We'll see how it all works out.
