I've got Evernote down to **2,724 Notes**.  I suppose nobody outside of myself knows how much of an accomplishment that is.  I'm going to take a step outside and taste something new and then dig into the **zxc-Old Hat Notebook** and see how low I can make that number go. **UPDATE:** I've got it down to **2,005 Notes** now.  While it tempting to pull the trigger on nuking over a 150 more of them, we decided to temporarily spawn an Notebook called Professional Cooking and there now lives 193 random notes about professional cooking I've collected over the years. All those **"Special Date & Time" Notes** in Evernote specifying nearly every now-irrelevant moment of my former lives are now gone.  The moment I _proposed to Krystal_, the moment I first _asked her out_, the _first kiss with Cara_ - all that shit is now gone.  _Goodbye!_ Figured the cooking knowledge was worth keeping tho!
